Lately, I have been consumed by boat loads of reading assignments followed by case studies, quizzes, and exams. Oh grad school...you're no...I mean, so fun! I started noticing a trend in my meals...they were mostly semi-homemade! This is a big change for me because I always want to make everything from scratch! But of course, the time commitment to school has not allowed me to do so. Hence, I resorted to semi-homemade meals such as this one.
I haven't purchased store-bought hummus in a *really* long time! I think ever since I made this garlic hummus in 2013, I have always made hummus at home...even when we have about 30 people over for a party. Yes, I've made a tubful of hummus!
Aaaand while I drown myself in my homemade hummus withdrawal sorrows...let's enjoy this semi-homemade easy-peasy lunch recipe!
Ingredients
1/2 ripe avocado
2 tbsp plain hummus
A pinch of salt for the avocado-hummus and a few pinches of salt for the fried egg (optional)
1/2 tsp zahtar* (optional)
1 egg**, preferably at room temperature
1 pita
Steps
- Bowl: Using a fork, smash the avocad with the hummus until you get a smooth consistency. Sprinkle a pinch of salt and mix well.
- Conventional oven: Turn the broil option on "low" and place the pita in the oven's topmost rack. Toast until it turns light brown, then flip it over and toast until that side turns light brown and crispy. This can take about a minute or two but keep a close eye on the pita. Alternatively, you can use a toaster oven to toast the pita.
- Non-stick pan: Heat a non-stick pan on medium heat. Coat the pan with a generous amount of cooking spray. Crack an egg in a small bowl and then transfer it to the greased pan. Cover and cook for 2-3 minutes or until the clear part of the egg has turned white. Once the egg is cooked, take the pan off the stove and set aside.
- Plate: Spread the avocado-hummus mash on the toasted pita. Put the fried egg on it. Sprinkle salt, pepper and zahtar.
- Eat: Err...more like, devour!
Total time 10-15 minutes | Serves 1 (You can easily double, triple or quadruple this recipe)
*Za'atar can be purchased on Amazon or other online spice stores. But if you have a hard time finding it, don't worry! My foodie friend, Priya, has the recipe for homemade za'atar on her blog!
**You can certainly use more than one egg per serving if you want.
