Looking for a perfect winter snack?? Well, here it is...Candied Pepitas. They're so easy to make and they're perfect for a party or just to munch on.

After looking through several recipes, I wasn't quite sold on any of them because some had too much sugar and some had crazy steps. I wanted to keep it simple and keep the sugar on the low side. So here's the mess i make's version of Candied Pepitas.

Quinoa Patties

During our nightly social network catch-up sessions while hubby and I were on vacation, I saw that Recipris (a fantastic vegetarian food/recipe blogger) had posted on her Facebook page that she was in Bali, which happened to be our next destination! I got super excited and asked hubby if it would be weird if I asked her to meet me while in Bali. He encouraged the idea and next thing we know is that we're sharing laughs with the newlyweds, Priya (author of Recipris) and her husband, Raman, over dinner. I'm so glad I took the initiative of reaching out to her because she is a sweetheart and so is her husband.

Persimmon Salsa

My sister-in-law recently tweeted, "Persimmons may be tied for best fruit with mangoes." That's a bold statement but I might have to agree with her. I call Persimmons, "The 'mango' of the Fall."

I was introduced to persimmons about a year ago and I had to research this fruit since I had never heard of it before. So basically there are two main kinds of this beautiful orange fruit: Fuyu - short and eaten when they're firm, Hachiya - "peach-shaped" and eaten when they're soft. Both are quite similar in taste but have different textures.

Tomato-Avacado-Quinoa Lettuce Wraps

Tom-eh-to...Tom-ah-to. To some, all tomatoes are the same but if you can get your hands on heirloom tomatoes, you must give them a try. They're a summer fruit (yes, it's hard to believe that tomatoes are categorized as fruit) so it might be difficult to find them at this time of the year but you can certainly make this recipe with cherry tomatoes and it will taste just as deeelish!
