Diwali is just around the corner and I got my hands on this recipe on Sprouted Kitchen. I modified it to make it taste Indian and it is probably one of the easiest mithais (sweets) to make. Last year I made Halwa, which is a traditional mithai with semolina flour, ghee (clarified butter), sugar and milk. I opted to make something easy, modern and relatively healthy this year. Almonds are my favorite and I call them alpha nuts because of their incredible nutritional value. Almond milk, almond butter, almond everything is so incredibly delicious, including this mithai recipe.
This is an easy peasy, 3-step recipe.
*Almond butter - get the creamy and unsalted kind. *Cardamom - optional.
Rolling the mithai in coconut and sugar mixture is optional. I know some people aren't coconut fans so you can skip this and simply roll the mithai balls in sugar or just garnish with raisins.
Step 1 - Toss everything (except the shredded coconut and sugar) in a food processor and run it for about a minute or two. You want the mixture to be mealy rather than turning it into an almond-cashew-date butter. Taste the mixture and see if you need to add sugar. I don't like my dessert too sweet so I didn't need to add any extra sugar because the dates were sweet enough.
Step 2 - Make 1-2 inch balls.
Step 3 - Roll them in the coconut+sugar mixture.
That's it, you're done!
