Remember this recipe??? I honestly can't get myself to eat egg salad any other way! This is truly a ridiculously healthy version of our beloved traditional egg salad. This whole situation is about 180 calories (per serving)! You can't beat that for a healthy AND delicious lunch option. Plus, don't you get sick of eating a salad every single day? If you're anything like me, you appreciate variety. You can make this wrap ahead of time and enjoy it at work. The best part is that you won't feel guilty at all!
Ingredients
1 ripe avocado
4 large hard boiled eggs (remove the yolks, only use the whites)
2 sprig of green onion - chopped = 2 tbsp chopped green onions
2 tbsp greek yogurt (add more if needed)
1/2 tsp salt (adjust per your taste)
1/2 tsp crushed black pepper (add more or less per your taste)
1 tsp lime juice
2 cups arugula (you can add more if you want to)
1/2 cups sliced radish (you can add more if you want to)
3 medium sized low-carb tortillas
Steps
- Add all ingredients to a mixing bowl, using a fork, break the avocado and boiled eggs. Mix until everything is well incorporated.
- Divide the egg salad on three tortillas. Then spread it evenly using the back of a spoon or an offset spatula. Top with arugula and slices of radish. Roll it up and eat! Or wrap it in saran wrap and take it to-go.
My friend and I had a running date today. We signed up for a Facebook group started by a friend of a friend where we run a mile per day and share our progress. After pushing ourselves to run that extra mile we devoured this avo-egg(white) salad wrap. The best part was that she thought there was mayo in it. Of course, there wasn't any mayonnaise. I used non-fat plain greek yogurt instead to bind the egg salad. Plus, the creaminess of the avocado helps to fill the void of mayo.
