Garlic-Parmesan Fusilli

Gosh, I had the worst migraine all afternoon. All I wanted to eat for dinner was something simple and comforting. Anything crunchy or spicy would have made my throbbing headache worse. So whats more comforting than pasta on a cold evening?! The answer is this quick, no-fuss pasta.

Ingredients

1 cup uncooked Fusilli (or any pasta of your choice)
2 tbsp Extra Virgin Olive Oil
2 cloves of garlic - minced
1/2 tsp herbes de Provence (or any herbs of your choice)
1 tsp salt Sea salt, or to taste
Crushed black pepper
tbsp grated Parmesan cheese

Steps

  1. Bring a pot of water to a boil, add 1 tsp salt and pasta and cook until the pasta is cooked. Drain the water out and set the pasta aside.
  2. Heat oil in a sauté pan on medium heat, add garlic and cook for a minute.
  3. Add cooked pasta and sea salt and mix well. Cover and cook for a minute.
  4. Turn off the heat and add crushed black pepper, herbes de Provence and grated Parmesan cheese.

SVU marathon + pasta  + some couch time = perfect Sunday evening.
