Roasted Potato Pizza

I had the day off today and I was being lazy when I woke up so I was browsing food blogs all morning. I was inspired by all the creativity I came across and wanted to make something different and fun. I saw a recipe for Roasted Potato Pizza on Food52.com and tweaked a bit for my pizza. In that recipe, they used goat cheese and olive oil as the sauce. I made a simple white sauce and used Cheddar, Gruyere and Monterey Jack cheese instead. You can even use Pepper Jack cheese instead of Gruyere. Instead of using pizza dough, I used frozen naan. We couldn't even taste the difference.

Potatoes

Ingredients

6 baby red potatoes - sliced
1/2 cup onion - sliced
3 tbsp Extra Virgin Olive Oil
3/4 tsp dried Rosemary
Sea salt, to taste
Black pepper, to taste

Steps

  1. Pre-heat the oven at 375º F.
  2. Toss the potatoes, onions and EVOO in a mixing bowl and add rosemary, salt, and black pepper.
  3. Line a cookie sheet with parchment paper or aluminum foil and spread the potato & onion mixture on the cookie sheet.
  4. Bake for about 15 minutes. Toss the potato slices around half way through.
  5. nce they're done, you can set them aside.

White Sauce

Ingredients

1 tbsp unsalted butter (you can use salted butter and skip on garlic salt)
1 tbsp all-purpose flour
1/2 cup room temperature milk
1/4 tsp garlic salt (you can use regular salt if you don't have garlic salt)
a pinch of oregano

Steps

  1. In a heavy bottom sauce pan, melt butter on medium heat.
  2. Add all-purpose flour and keep stirring with a whisk for about 2 minutes. You will start noticing a change in color of the flour.
  3. Add milk while whisking.
  4. Constantly whisk the mixture until it thickens a bit. Then turn off the heat.
  5. dd garlic salt or regular salt and oregano. And set aside.

Assembling the pizza

Ingredients

3 pieces of naan
1/2 cup shredded Cheddar cheese
1/2 cup shredded Gruyère cheese
1/2 cup shredded Monterey Jack cheese​

Steps

  1. Pre-heat the oven at 350º F.
  2. Place naans on a lightly floured pizza pan.
  3. Drizzle some EVOO on the naan so they don't get dry.
  4. Spread the white sauce evenly on each piece of naan.
  5. Spread the shredded cheese mixture.
  6. Lay the potato & onion mixture over the sauce.
  7. Bake for 15-20 minutes.
  8. Let them cool for a minute before cutting slices.
  9. ou can top it with capers or crushed red pepper.

This pizza was simple but flavorful. It was buttery and cheesy. The hint of rosemary was perfect with the potatoes and cheese. The naan was crispy and delicious!
