I think I was dreaming about this recipe last night. I woke up, went straight to the kitchen and instead of making coffee, I started grabbing ingredients from the pantry to make granola. I added walnuts (1 tbsp - chopped) and dried figs (1 tbsp - chopped) to my homemade granola recipe.
Ingredients
2 cups plain non-fat yogurt
1 1/2 cup chopped sweet mangoes (I used Champagne mangoes. If you use mangoes that have a lot of fiber, you might have to puree the mangoes first and strain the pulp.)
1 tbsp honey (If your mangoes aren't that sweet, you can add more honey if you'd like.)
Steps
- In a blender, mix the yogurt, mangoes and honey.
- Serve with granola and your choice of fruit.
Tip: While mangoes are in season, peel the mangoes and cut them into small cubes and freeze them. They will last for several months. When Fall comes around, and you're craving mangoes, you can just use the frozen mangoes for smoothies, yogurt, etc.
