Mini Frittatas

This is adapted from an awesome recipe by Giada De Laurentiis. It is perfect for a large group because it can be made ahead and served at room temperature so it was perfect for Football Sunday. Plus, it is super easy and you can be creative with the ingredients.

Ingredients

12 large eggs
3/4 cup 2% milk
1/2 cup yellow onions - chopped
1/2 cup green bell peppers - chopped
1 1/2 tbsp garlic - minced
3 tbsp parsley - chopped
1 cup shredded cheddar cheese*
1 tsp salt, or to taste
1 tbsp black pepper

Steps

  1. Pre-heat the oven to 350º F.
  2. Whisk the eggs and milk in a large bowl.
  3. Add the rest of the ingredients and mix well.
  4. Spray a mini muffin tin with cooking spray. (I made these in 2 batches since I only had 1 mini muffin tin. You can even use a regular muffin tin.)
  5. Pour the egg mixture in the greased muffin cups almost to the top.
  6. Sprinkle shredded cheddar on top.
  7. ake for 10 minutes. (Regular muffin cups will take 12-13 minutes to cook.)

Prep/assembly time 15-20 minutes | Baking time 10-13 minutes | Serves 6-8

*You can substitute cheddar cheese with Parmesan cheese. Simply mix in the parmesan cheese in the egg mixture instead of sprinkling it on top.
