I love eggs!
My dad makes the best eggs! They are flavorful, juicy and oh so good. He usually makes omelettes with veggies, green chillies, salt & pepper, and cooks them in a well greased pan. I have tried that myself and they just don't taste the same. Plus, I can barely flip an omelette, so I end up making scrambled eggs instead. My sister and I get super excited whenever my dad makes eggs. She sent me a text this morning, "Dad is making me eggs!! :)" I was jealous. :-P
So I knew I wanted eggs for breakfast and wanted to try something new. I have poached eggs once and the result was not pretty. The eggs fell apart and I maybe got one somewhat edible poached egg. I followed another recipe today from Smitten Kitchen and it worked really well. The whirlpool technique works...it is scary and overwhelming but it works! I used Italian bread but you can use whatever you have/like.

Just like she says at the end of her post, "Seriously, I want another one just looking at it now." That is exactly how I felt this morning after having one poached egg. I was so tempted to make another one but I was full and didn't want to overdo it. Hubby was laughing at me because I was so sad when I got to the last bite.
I sliced an apple, sprinkled some cinnamon sugar and drizzled some honey.
