Mango Waffles

Mmmm I love when mangoes are in season. Here's a recipe I found online on a food blog, I simply added corn starch to make them crispy.

Ingredients

2 cup all-purpose flour
2 tbsp sugar
1 tbsp baking powder
2 tbsp corn starch (for crispy waffles)
pinch of salt
2 cup milk
2 tbsp vegetable oil
2 cup chopped ripe mangoes

Steps

  1. Whisk together all the dry ingredients.
  2. Add the wet ingredients and whisk well.
  3. Gently fold in mangoes.
  4. Follow the directions of your waffle maker and use the batter accordingly.
  5. Serve with maple syrup or agave nectar.

Makes 8 small waffles | Prep time 10-15 minutes | Cooking time 10-15 minutes

I used the leftover Mango Mousse I made the day before instead of maple syrup.

Our friend Ellina and her friend Juliana came over for brunch when I made these waffles. Ellina made Mango-Orange mimosas served with sweet strawberries...sooo delish! Ellina is adorable and she is super athletic. I met her at a Christmas party last year and we couldn't stop talking about food.
