Pizza, Pasta, Gelato. These three were eaten on repeat by us vegetarians during our recent trip to food heaven - Italy. I kept telling myself, "Oh I won't get sick of this...It's so good..How could I?!" Little did I know, I actually craved anything but carbs toward the end of our trip. No carbs?! Did I just say that? I couldn't believe it myself but a few times I actually just ordered a salad with tomatoes and pesto and voluntarily skipped the bread. I was craving fresh vegetables like no other and Indian spices, of course. Thankfully, we found an awesome Indian restaurant in Florence, which we went to twice because we were in serious daal withdrawal. "What's in your veggie patty?" -- the first question I ask before ordering a veggie burger at restaurants. Finding a good veggie burger is like a dream come true. Mainly because I'm not a fan of the patties made with fake meat. I know those things are like the holy grail for the people that have given up eating meat but I simply can't come to terms with it. No, not gonna happen. Yes, I used to eat meat but I certainly don't miss it. I'm content with a good bean-y patty. Hence, came forth this recipe and this other recipe.

I had the day off today and I was being lazy when I woke up so I was browsing food blogs all morning. I was inspired by all the creativity I came across and wanted to make something different and fun. I saw a recipe for Roasted Potato Pizza on Food52.com and tweaked a bit for my pizza. In that recipe, they used goat cheese and olive oil as the sauce. I made a simple white sauce and used Cheddar, Gruyere and Monterey Jack cheese instead. You can even use Pepper Jack cheese instead of Gruyere. Instead of using pizza dough, I used frozen naan. We couldn't even taste the difference.
