Avocado-Egg(White) Salad

One of my dad's favorite things to eat is an egg salad. Whenever I visit my parents, I make him the traditional egg salad -- soft boiled eggs, yellow onions, mayo, mustard, herbs, salt and pepper. I never thought of trying to make it any other way until my aunt-in-law (Monica bua/aunt) asked me if I knew of any recipes for an Avocado Egg Salad. Ahh such a great idea! A healthy alternative to the traditional egg salad without all the fat from the egg yolks and mayonnaise. The avocado adds a wonderful creaminess and the greek yogurt takes place of the mayo. Adding lime juice prevents the avocado from browning while adding a delightful tangy flavor

For as long as I can remember, I've loved chickpea crepes made by my mom. She makes them with a lot of Indian spices and occasionally add chopped spinach or fenugreek leaves. This was her "quick fix-in' for lunch or dinner and we'd happily indulge in this mouthwatering deliciousness.

Mediterranean Chickpea Salad

Whenever I travel through Chicago O'Hare airport, I have to make sure I get this delicious chickpea salad from Argo Tea. It is super delicious and a perfect airport meal/snack because its light and nutritious. Last time I ate this salad, I wrote down the ingredients and guessed the proportions per my taste. I made a huge batch of this protein packed salad a few weeks ago and my sister and I ate this for lunch for a few days and we didn't even get sick of it.

Blood Orange Juice

February 23, 2014 Karishma

Oh its citrus season and I’m loving it! I wasn’t feeling well last week and all I wanted was some fresh juice. I had a bunch of these beauties so I decided to “juice” them. I don’t own a juicer so I improvised.
