These matcha noodles were my precious find from the green tea wonderland of Uji, a town near Kyoto, Japan. This small town is known to grow some of the best green tea. Even though at that time I thought I bought enough loose leaf sencha, I am now contemplating whether or not I should have bought more. I don't ever want to run of that delicious tea. Yes, I can possibly find it on their online stores or even on Amazon but its about the experience. Whenever I drink the sencha or matcha, I immediately get teleported to the daydreams of Japan.
This picture was taken from the Uji bridge, the oldest bridge of Japan. It has been destroyed by many tsunamis and hurricanes and has gone through many renovations but it still stands strong over a beautiful Uji river.
I found vegetarian Dashi, a Japanese broth, at a local Japanese store recently. You can find it on Amazon or you can just use regular broth. If you can't find Matcha noodles at your local Japanese stores, try looking for them online. Amazon says they're temporarily out of stock but keep checking. I found a few other blogs that show you an easy way to make the noodles at home and you don't even need a pasta maker, here's one of them: Thirsty For Tea. If you don't wanna wait for Amazon to stock the noodles or make them at home, just use plain ramen noodles, it will be just as delicious.
Ingredients
10-15 sticks of matcha noodles or plain ramen noodles
1 packet vegetarian dashi in 1.5 cup of water or 1.5 cup of vegetarian broth
Veggies of your choice. I used Julianned carrots, shredded cabbage and chopped cilantro.
A few slices of lemon.
Additional salt, to taste
Soy sauce and Sriracha (optional)
Tofu (optional)
ther veggies you can use: green onions, white onions, corn, bean sprouts, spinach.
Steps
- In a medium pot, add water and vegetarian dashi.
- Once the water comes to a low simmer, add noodles. Turn off the heat once the noodles are almost cooked.
- Leave the pot on the stove, add veggies, cover and let it sit for a minute or two.
- Serve hot.
