Waffles & Potatoes O'Brien

Hubby and I recently went to Maui, HI. It was a great vacation. We got to relax by the beach and do adventurous things as well. Ziplining and Kayaking were my fave. We also woke up at 2 am to see the sunrise at Haleakala mountain...it was unreal. One of the highlights of our trip was probably the staple coconut syrup served with pancakes and waffles. We found it at a local store so bought a bottle to try. Now we wish we bought more!

Waffles

Ingredients

1 cup all-purpose flour
1 tbsp sugar
1/2 tbsp baking powder
1 tbsp corn starch (for crispy waffles)
pinch of salt
1 cup milk
1 tbsp vegetable oil

Steps

  1. Whisk together all the dry ingredients.
  2. Add the wet ingredients and whisk well.
  3. Follow the directions of your waffle maker and use the batter accordingly.

You can serve the waffles with regular maple syrup, honey, agave nectar or coconut syrup from Maui if you have it. So delicious!

Makes 4 small waffles | Time 20 minutes

Potatoes O'Brien

Ingredients

2 small potatoes - chopped
2 tbsp finely chopped yellow onion
2 tbsp finely chopped bell peppers
1 tbsp finely chopped parsley
1/2 tsp garlic salt or regular salt
black pepper
1/2 tbsp salted butter
1 tbsp Extra Virgin Olive Oil

Steps

  1. Boil chopped potatoes in water for 5 minutes and drain out the water. (This reduces the cooking time on the pan)
  2. Melt butter on a non-stick pan and then add EVOO.
  3. Add onions and cook for 1-2 minutes.
  4. Add potatoes, cover and cook for 5-8 minutes (or until the potatoes are semi-cooked) on medium-high heat. Be sure to stir the potatoes every 2 minutes.
  5. Add bell peppers, salt and pepper, cover and cook for another 2-3 minutes (or until the potatoes are cooked).
  6. Add parsley and serve.

Serves 2 | Prep time 15 minutes | Cooking time 15 minutes

Orange Supremes

Hubby surprised me with a knife skills class at Sur la Table a few weeks ago. We learned some awesome skills and one of them was supreming an orange. Niether of us knew what the heck was an orange supreme. It is basically the "meat" of the fruit. It makes a difference in the taste and texture of citrus fruits when you take the membrane off. And it looks fancy.
