Mediterranean Chickpea Salad

Whenever I travel through Chicago O'Hare airport, I have to make sure I get this delicious chickpea salad from Argo Tea. It is super delicious and a perfect airport meal/snack because its light and nutritious. Last time I ate this salad, I wrote down the ingredients and guessed the proportions per my taste. I made a huge batch of this protein packed salad a few weeks ago and my sister and I ate this for lunch for a few days and we didn't even get sick of it.

Carrot-Tomato Soup

This soup brings back childhood memories. My mom used to pair this soup with her [potato-peas-carrot based] veggie burgers and they went so well together. The simplicity of the soup is what makes it so divine. Adding peas, corn and green beans is always a great option. You can also top it with croutons or toasted chickpeas. Seriously, this soup is so easy, delicious and versatile!

Zucchini Bowls

I was never a fan of zucchini chunks in minestrone soups because of its one dimentional soft consistency. My friend, Devina, made these awesome Zucchini Parmesan Crisps (featured on The Mess I Make) and I started exploring other ways to eat zucchini squash.

I made these cute zucchini bowls, that almost look like sushi rolls, for a Christmas dinner (sorry, this is a super late post) hosted by the newlyweds, #KenVina (Ken and Devina). Carving out the zucchini bowls is moderately labor intensive but the end result is super adorable so it is all worth it, I promise!

Want to take a break from kale? Give chard a chance. It’s a nutritious green and makes a great warm salad. I made this super easy warm chard-red quinoa salad in less than 15 minutes for a quick lunch. Its loaded with garlic and I topped it with tomatoes to add some freshness. You can add other veggies for more color and taste, add an egg, grilled tofu…this has endless possibilities!
