Hubby is working on his next film with two awesome girls from his class, Jade & Chelsey. Both the girls are fun to hang out with. We invited them over for dinner and a movie. I made chaat (Indian street food). I felt that I wasn't really putting in any effort because chaat is basically putting a few different things together and everything was store-bought. I was itching to "create" something. I had puff pastry sheets in the freezer, fresh strawberries from the farmer's market and goat cheese so I decided to put them together. I have a new found love for goat cheese. I tried it at a farmer's market several weeks ago and my knees almost buckled. The gentleman selling the cheese was also the maker of the succulent cheese. He told us about his farm and how his family is involved in the business. I love hearing about their stories. His story reminded me of the days when my dad used to make cheese in India.

I've only ever had dried figs and they're pretty delicious. I saw fresh ripe figs for the first time and got excited. I bought a pack but I didn't know what to do with them. I tried to eat them raw but I wasn't a fan. They weren't as sweet as I thought they would be. Maybe it was just that batch I got. I browsed for recipes and I decided to make fig jam. I couldn't settle on a single recipe so I decided to combine inspirations from a few I found on Food52.com. My mom and I kept trying the mixture to see what needed to be added and the aftermath was pretty sweet (pun intended). :)

Creativity was at its peak and I came up with this combination. I thought the pizza turned out to be a bit dry so I'd add caramelized onions next time. Just melt 1 tbsp unsalted butter in a non-stick pan and cook 1/4 cup sliced yellow onion until they turn light brown.

An Indian restaurant in Fremont, CA has Mango Chaat Pizza that my hubby loves. I tried to mimic their MCP at home today and it turned out great! I just guessed the ingredients they used. It's so easy to make and it will "wow" your family and friends. My hubby said, "this is probably the best thing you've ever made." Hmm...but he said that about the pasta I made the other day. :-P

I had the day off today and I was being lazy when I woke up so I was browsing food blogs all morning. I was inspired by all the creativity I came across and wanted to make something different and fun. I saw a recipe for Roasted Potato Pizza on Food52.com and tweaked a bit for my pizza. In that recipe, they used goat cheese and olive oil as the sauce. I made a simple white sauce and used Cheddar, Gruyere and Monterey Jack cheese instead. You can even use Pepper Jack cheese instead of Gruyere. Instead of using pizza dough, I used frozen naan. We couldn't even taste the difference.
