Baked Eggs

I got this recipe from the show, Everyday Exotic, on the Cooking Channel. It looked delicious when I saw it on TV and it tasted pretty good when I made it today!! The recipe called for shallots but I used yellow onions and instead of vegetable oil, I used EVOO. And I used less butter than he did on the show. I’ll probably add some herbs to it next time I make it, it was a little bland for me.

Ingredients

2 eggs (room temperature)
1 tbsp chopped onions or shallots
1 tbsp chopped tomatoes
1 tsp extra virgin olive oil
1 tsp butter/margarine
salt & pepper

Step

  1. Pre-heat the oven to 350 degrees.
  2. Brush oil in a ramekin and spread the chopped onions/shallots.
  3. Break the eggs into the ramekin.
  4. Sprinkle salt & pepper.
  5. Add chopped tomatoes
  6. Add butter/margarine.
  7. Place the ramekin in the oven for about 10-12 minutes.

This was so easy to make! Hope you guys enjoy it and of course, make it your own by adding herbs/spices or more veggies to it.
