Valentine's Day

We have always gone out for a fancy dinner for Valentine's day but this year I wanted to do something different. So we decided to cook together at home. Something we had never made before and something fun. It was a busy day for both of us so we didn't make everything from scratch. But it was a fun cooking date nonetheless.

Crostini with Sundried Tomato Pesto

We bought a small loaf of Rosemarry herbed bread, sliced them so each slice would be 1/4 inch thick. Drizzled some EVOO and baked for a few minutes at 350º F on each side until they were warm and toasty. Bought Sundried Tomato Pesto from the grocery store and just spread that on the bread. You can also sprinkle some cheese on top, Parmesan would be good.

Pizza

We used Trader Joe's Garlic & Herb pizza dough, it was delicious! Use regular pasta sauce, add your choice of veggies or meat. We made ours with chopped up jalapenos, red peppers, cherry tomatoes and onions. I used a combination of Jack and Mozzarella. Drizzled some EVOO and baked as directed on the pizza dough bag. You can get creative with this and make a few personal size ones too with a variety of toppings.
