Kale Chips

I have been obsessing over Kale. If you haven't seen it already, watch the video of my Kale and Quinoa salad. I've had Kale in many forms...salads, sautéed with a poached egg over it, kale and lentil soup, Indian entrees, smoothies and many more. Kale is considered one of the best super foods. It is loaded with anti-oxidants (prevents cancer), iron, Vitamin A (good for eyes and skin), Vitamin C (boosts our immune system) and Vitamin K (for healthy bones and protects against certain cancers). It is low in calories, has no fat and it is high in fiber.

Warm Spinach Salad with Poached Egg

I have been trying to get back into running. I was never a runner but in college, after putting on a few pounds, I decided to start running (more like jogging) as part of my exercise routine. Now I enjoy running on cool early mornings. I have been running outside more since I moved to California, it is much better than running on a treadmill. Today I ran 6.5 miles with a 10.32 average. I was beat after the run but felt so great burning 545 calories! I wanted to make a nutritious lunch so after brainstorming ideas while running, I came up with this recipe.

Tofu Lettuce Wraps

My hubby requested Indo-Chinese food for dinner. I was going to make noodles and fried rice but I wanted to make something new as well, so tofu lettuce wraps came to mind. I had never made them before and only had them once at P. F. Chang's a few years ago! I went to Whole Foods and picked up butter lettuce, tofu and peanut butter. The peanut butter was probably the best I've ever had! It was the Whole Foods brand (365) peanut butter. So peanuty and so buttery...YUM! Move over Skippy & Jiffy.

Anyway, I came home and just threw some ingredients together and voila...came up with a delicious peanut sauce. Also, butter lettuce is preferred because of its smooth texture. And they're small and cute!

Rosemary popcorn

I love getting popcorn when I go to the movies. I also think it is a great snack. I was at Trader Joe's and walked by popcorn kernels and thought I'd give it a shot. I came home and immediately pulled out a heavy bottom pan and started popping the kernels. I couldn't stop eating and ended up making more right away! My hubby isn't a fan of popcorn because they get stuck on your teeth and that annoys him. He tried my homemade popcorn and ended up munching on them. He actually said he liked this popcorn because they don't stick to your teeth.

My cousin's wife is a great cook and she is really good at Indian fusion recipes. She shared this black bean burger recipe with me and it's one of our favorites! I made baked fries because I wanted a healthier option for regular fries.
