We had a farewell potluck at work for one of our Travel (temp) nurses, Katie. She is originally from the Midwest but she wanted to explore the West coast so she worked at our hospital for 3 months and now she is in Southern California. Katie is super sweet and she is an excellent nurse. I wish her nothing but the best in her future endeavors.
I had never made Banana Bread before so this was the perfect opportunity to try it. Of course, I went to Smitten Kitchen to look for a recipe and found the perfect one. This recipe is easy and incredibly flavorful.
Ingredients
3-4 ripe bananas
1/3 cup melted salted butter
3/4 cup brown sugar
1 egg 1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 cup all-purpose flour
1 tsp baking soda
pinch of salt
(The original recipe has bourbon and cloves as well but I decided to exclude them.)
Steps
1. Pre-heat the oven 350º F. 2. Mash the bananas.
3. Add melted salted butter.
4. Add brown sugar, egg, vanilla, cinnamon, nutmeg and mix well.
5. Add flour, salt and baking soda and mix well.
6. Pour the batter in a buttered loaf pan. Add some brown sugar and pecans on top.
7. Bake for 45-55 minutes. Test for doneness by sticking a toothpick in the bread, it should come out clean (some crumbs are ok). Cool on a wire rack.
