The other day my sister sent me a text swooning over a breakfast smoothie she made. She insisted that I should make it right away to experience the goodness of this delectable smoothie. I had these two overly ripe bananas sitting there staring at me. These sad looking bananas didn't deserve to be in the trash so I immediately decided to make banana bread. Then I realized that I didn't have enough of these deathly looking bananas to make a loaf of banana bread, so I decided to cut the portions in half and made muffins instead. I used my previous Banana Bread recipe and just added chocolate chips and chopped walnuts.

We had a farewell potluck at work for one of our Travel (temp) nurses, Katie. She is originally from the Midwest but she wanted to explore the West coast so she worked at our hospital for 3 months and now she is in Southern California. Katie is super sweet and she is an excellent nurse. I wish her nothing but the best in her future endeavors.

I was in the mood for pancakes this morning but I did not have pancake mix and I did not feel like going to the grocery store. I did not have maple syrup, so I ended up using agave nectar, which was a great substitute! I also did not have eggs, so I resorted to the vegan version and just substituted soy milk with 2% milk. (I should go grocery shopping :-P). I googled a few recipes and got an overview of the ingredients. This is a simple recipe and took me just a few minutes to put it together. I will never buy pancake mix...ever. The pancakes were perfect and my hubby said they were the best pancakes he's ever had. Woahh!
