Waffles & Potatoes O'Brien

Hubby and I recently went to Maui, HI. It was a great vacation. We got to relax by the beach and do adventurous things as well. Ziplining and Kayaking were my fave. We also woke up at 2 am to see the sunrise at Haleakala mountain...it was unreal. One of the highlights of our trip was probably the staple coconut syrup served with pancakes and waffles. We found it at a local store so bought a bottle to try. Now we wish we bought more!

Poached Egg on Toast

I love eggs!

My dad makes the best eggs! They are flavorful, juicy and oh so good. He usually makes omelettes with veggies, green chillies, salt & pepper, and cooks them in a well greased pan. I have tried that myself and they just don't taste the same. Plus, I can barely flip an omelette, so I end up making scrambled eggs instead. My sister and I get super excited whenever my dad makes eggs. She sent me a text this morning, "Dad is making me eggs!! :)" I was jealous. :-P

So I knew I wanted eggs for breakfast and wanted to try something new. I have poached eggs once and the result was not pretty. The eggs fell apart and I maybe got one somewhat edible poached egg. I followed another recipe today from Smitten Kitchen and it worked really well. The whirlpool technique works...it is scary and overwhelming but it works! I used Italian bread but you can use whatever you have/like.

Banana Almond Pancakes

I was in the mood for pancakes this morning but I did not have pancake mix and I did not feel like going to the grocery store. I did not have maple syrup, so I ended up using agave nectar, which was a great substitute! I also did not have eggs, so I resorted to the vegan version and just substituted soy milk with 2% milk. (I should go grocery shopping :-P). I googled a few recipes and got an overview of the ingredients. This is a simple recipe and took me just a few minutes to put it together. I will never buy pancake mix...ever. The pancakes were perfect and my hubby said they were the best pancakes he's ever had. Woahh!
